You can select form our list of regular cuts, or order one of our variety packages, or a whole quarter or side of beef for your freezer. You can also specify your own variety package. With enough notice, our butcher can do custom cuts for special occasions.

CUSTOM CUT SIDES AND QUARTERS OF BEEF
These orders are cut to your specifications, vacuum packed in sealed packages, labeled and flash frozen. They are priced by hanging weight before cutting.

FORE-QUARTER, $3.75/lb
The chuck can be cut as roasts, stew cubes, flat iron steaks, fajita flats and/or ground beef. The rib section offers either rib roast or steaks which can be cut with bone-in or as rib eyes. It also may include back and spare ribs, short ribs, hanger steak and some skirt steaks. The brisket and fore-shanks are included. You will also receive ground beef. Soup bones may be included. Liver and other organ meats are available. Weight will be from 170 to 220 lbs.

Hind-Quarter, $4.05/lb
A choice between T-Bone and Porterhouse Steaks or NY Strip with Tenderloin. The sirloin can be cut as either steaks or roasts as can the sirloin tip and tri-tip. The round can be cut as top round London Broil steaks and/or roasts and ground beef. Flank steaks and Skirt Steaks are included. Soup bones are available. Weight will vary between 120 and 170 lbs.

SIDE OF BEEF, $3.90/lb
The side includes all of the choices from both quarters. A side weighs from 300 to 350 lbs.
